Summer Watermelon, Cucumber & Feta Salad

Watermelon Salad

Ingredients
4 cups seedless watermelon, cubed or balled
1½ cups cucumber, thinly sliced (preferably
English or Persian cucumbers)
¾ cup feta cheese, crumbled
¼ cup fresh mint leaves, chopped or torn
2 Tbsp EVOO
1 Tbsp fresh lime juice (or lemon juice)
Salt and pepper, to taste
Optional: ¼ small red onion, very thinly sliced

Instructions
1. Prepare the ingredients: Cube the watermelon, slice the cucumbers, crumble the feta, and chop the mint. If using red onion, soak slices in cold water for 10 minutes to mellow their flavor.

2. Make the dressing: In a small bowl, whisk together the olive oil, lime juice, a pinch of salt, and black pepper.

3. Assemble the salad: In a large serving bowl, gently combine the watermelon, cucumber, red onion (if using), and mint. Drizzle with the dressing and toss lightly.

4. Add feta last: Sprinkle crumbled feta over the top just before serving for the best texture and presentation.

5. Serve and enjoy: Best served chilled. If making ahead of time, combine all ingredients except the mint and feta—and add those just before serving. CS
